How to catch/filter e-mail received through MS-Outlook?

I'm writing a program that will monitor e-mails received through MS-Outlook. The only problem is I have NO idea how to do this! I know that all MS programs are LANK integrated and that it is possible to monitor MS-Outlook (for example: when a reminder is activated you can catch the event). How would you go about catching/filtering e-mails? Would it have something to do with the MS-Exchange Server that is being used? *scratch* I have no experience working with MS-Outlook so I'm really at a loss!
